About Us

The Hungry Hiker is the culmination of Executive Chef Janak Gautam's lifelong journey through the kitchens of Nepal, India, Hong Kong and Australia.

From a small Himalayan village to some of Asia's most respected hotel groups, Janak has spent decades refining his craft while remaining deeply connected to the traditions that first inspired him to cook.

Today, The Hungry Hiker brings those experiences together in a warm, chef-driven dining destination in the Dandenong Ranges.

Where did it all start?

Janak's journey began in a small hillside village in Nepal, where food, family and community were deeply connected. Like many young Nepalese seeking greater opportunities, he left home to pursue a career abroad — carrying with him the traditions and flavours that continue to inspire his cooking today.

A Move to India

Determined to master his craft, Janak moved to India and trained with leading hotel groups including Hyatt and Oberoi. Working across multiple cities, he developed the technical discipline and understanding of flavour that would shape the next chapter of his career. His journey later took him to Hong Kong, where he refined his skills in international fine dining at the renowned Grand Hyatt.

Bringing Indian Cuisine To Melbourne

In the early 1990s, Janak moved to Australia and helped establish several Indian restaurants across Melbourne and the Dandenong Ranges. Through decades of cooking, mentoring and hospitality, he has played a role in introducing generations of diners to authentic Indian cuisine.

Beyond his own restaurants, Janak has mentored and trained numerous chefs throughout Melbourne. His influence can still be found in kitchens across the city, where many continue to apply the techniques, standards and traditions he has shared over the years.

A New Chapter

The Hungry Hiker represents the latest chapter in Janak's journey — a restaurant built around the values that have guided him throughout his career: hospitality, craftsmanship and respect for tradition. Nestled in Tecoma at the gateway to the Dandenong Ranges, The Hungry Hiker brings together decades of experience, creating a place where guests can slow down, share a meal and experience Indian and Nepali cuisine prepared with care. I have spent most of my life in kitchens.

My journey began in Nepal and later took me through India, Hong Kong and Australia, where I was fortunate to learn from many talented chefs and work in some remarkable establishments. Along the way, I discovered that great food is not about complexity — it is about care, patience and respect for the ingredients.

At The Hungry Hiker, we cook the food we believe in. Many of our recipes have been shaped by decades of experience, while others are inspired by the places and people who have influenced my journey.

My hope is simple: that every guest leaves having enjoyed a meal prepared with honesty, warmth and heart.
