The Heart of the Kitchen
Our kitchen is led by Chef Janak Gautam, whose philosophy is simple: respect the ingredient, respect the craft. Flavours are built slowly, through careful spice layering, long simmering, and traditional Nepali and North Indian techniques. Every recipe stays true to the dishes he mastered under major hotel chains such as Oberoi and Hyatt, and in iconic kitchens like Moti Mahal in Daryaganj, Delhi — learning directly from the earlier masters who shaped the cuisine we know today.
The Himalayan Method
Our goat dishes are a true expression of Himalayan cooking. We cook on the bone for depth of flavour, use hand-ground spices, and lean on slow braising to create rich, soulful curries. Sauces are scratch-made, never from a packet, and many dishes are finished in a wok or karahi, echoing the robust, high-altitude cuisine of rural Nepal. This “Himalayan Method” is what gives our food its distinctive character.
Our Ingredient Philosophy
We start with fresh produce and treat it with care. We avoid pre-made bases and generic gravies, choosing instead to build each sauce from the ground up in our kitchen.
